SALSA?? ANYONE?

What's the first ingredient you think of when you think of fresh pico salsa?

Watermelon, of course!!
And then the other ingredients that you would normally think of for salsa.
Can't you just smell that fresh cilantro? I LOVE that smell!! I swear, if Cilantro was a fragrance to wear, I would be the first in line to purchase it.
Doesn't it look delicious?

I wonder how many people will be fooled this evening, when they go to take their first bite? It looks very deceivingly like tomatoes.

I found the recipe in the July/August issue of Country Living.

3 cups finely diced seedless watermelon (about 5lb. watermelon)
2 jalapeno peppers, seeded and minced
1/3 cup chopped fresh cilantro
1/4 cup minced red onion
Juice of 2 limes
Salt

In a medium bowl, combine all ingredients, except salt. Season with 1/4 teaspoon salt and serve chilled, or at room temperature with tortilla chips.
